Unpopular opinion: that $140 cleaver sharpener was the biggest waste of my money this year
I bought one of those fancy guided sharpening kits back in March after a guy at the supply house in Dayton told me it would pay for itself in a month. Nope. I run a small shop and bust through a lot of boning knives and cleavers every week, and that thing was slower than my old stone and tri-hone. I'm out about $140 plus the two hours I spent watching videos trying to get the angle right, and honestly my cleaver got a worse edge than when I just do it by hand. Your mileage may vary depending on what you cut, but for me going back to a simple stone and rod was the right call. My advice if you're starting out is skip the fancy rig and put that money into a good steel you'll actually use daily. Has anyone found a guided setup that actually beats freehand, or is it all hype in your experience?
Funny thing, my neighbor bought a fancy coffee grinder last year and now he's back to the cheap one because the settings were too much hassle. Most of this gear just adds steps instead of saving time.
