The week we had to break down a whole bison by hand

A catering company in Boise ordered a full bison for a big event last month, and their band saw broke down the day before pickup. We had three guys working for about 8 hours straight with just our breaking knives and a cleaver to get through every primal. My hands were sore for days, but it was a good reminder of the basics. We ended up charging an extra $200 for the labor, and the client was fine with it. Has anyone else had to do a full breakdown without power tools recently?

That "hands sore for days" part is so real. We had a similar thing with a whole pig last fall. Keeping the knives razor sharp was the only thing that made it possible.

My last breakdown without power tools was a chicken, and I still needed a nap.
