Skipping whole-animal use is plain irresponsible for our trade

Leaving good parts to rot just adds to landfill mess. Real butchers find a way for everything, from bones to fat.

Oh man, this whole thing just reminds me of the first time I saw someone make sausage. They used all the odd bits and trimmings I would have never thought to keep, and it was some of the best meat I ever tasted. Really makes you wonder how much good stuff we just don't see because it gets sorted out before it hits the case. Kind of changes how you look at a simple pack of ground meat, you know?

Man, I have to admit, I used to not care about using the whole animal. But learning how butchers make broth from bones and cooking fat from trimmings changed my view. Seeing all that waste piling up in landfills really drives the point home. Now I see why skipping parts is just adding to the problem.

Save your veggie scraps in a freezer bag until you have enough for broth, it's basically free flavor. I always ask my butcher for soup bones or fat trimmings now, most are happy to give them away cheap. Once you realize how much good food gets thrown out, it changes how you shop and cook. Makes a real difference in your grocery bill too, which doesn't hurt.
