Shifting a brisket over to my pellet smoker beat my stick burner by a mile
Did a side by side last weekend with two 14 pounders, same rub and everything. The pellet one came out way more even, no hot spots, and I didn't babysit it for 14 hours. Has anyone else made the jump for their long cooks or am I the only one who got tired of splitting wood?

Wait, you actually got NO hot spots on a pellet smoker? That's wild, I've never had one that didn't have a dead zone near the edge. Did you rotate the trays or was it just that even the whole time? I'm honestly shocked, my stick burner has a 20 degree swing from left to right no matter what I do. The not babysitting part speaks to me though, I've fallen asleep in a lawn chair more times than I want to admit watching a firebox. Maybe I need to stop being stubborn and give the pellet thing another look, because 14 hours of feeding wood is getting old.
