Saw a guy use a dirty bandsaw blade on pork shoulders in Little Rock, nearly walked out
He was pushing a half-frozen shoulder through a blade crusted with old fat and bone dust, and when I asked him about it he said 'it cuts fine,' has anyone else seen shops that refuse to change blades until something actually breaks?
Holy crap, bone dust on a half frozen shoulder? That is nasty. I've seen some greasy blades in my time but he was basically grinding old pork fat into the next batch of meat. I would have said something too, like bro that's how you get cross contamination and a really gross smoke flavor.
