PSA: Saw a casing burst at a plant in Modesto, now I check every hog before I cut
Was touring a small plant outside Modesto back in March when a guy on the line hit a hog casing that was still packed with old feed and grit. The blade kicked back and sprayed the whole station, and he got a nasty gash on his forearm that needed 9 stitches. Turns out the supplier had switched to a cheaper rinse cycle and nobody caught it on intake. Now I do a quick squeeze and smell test on every batch before it touches my grinder, no exceptions. Anyone else had a bad run of casings from a new supplier this year?

Had the same thing happen with a batch from a guy in Stockton last fall, gritty casing jammed my stuffer and I ended up tossing 40 pounds. Now I keep a spray bottle of water handy and rinse test every new box before it goes in the cooler.
