Pro tip: splitting a whole pig with a hacksaw took me 3 hours until a guy in Omaha showed me the joint trick
I fought through the spine on a 180 lb hog last Saturday because I was cutting through bone instead of finding the gaps at the joints, and it went from a 3 hour job to about 45 minutes once he walked me through it, so what's your go to move for breaking down a pig fast without wrecking the cuts?
That line about "cutting through bone instead of finding the gaps at the joints" is the whole game right there. I used to think you had to muscle through with a saw and just power past the hard parts, but once you learn where the joints actually sit it's a totally different job. Now I go by feel at the shoulder and hip and let the knife find the seam instead of forcing it. A good boning knife and a sharp skinning knife will beat a saw most days anyway. Wish someone had shown me that trick years ago instead of me ruining cuts and dulling blades.
