Sounds like that butcher saved you from a lifetime of fighting imaginary enemies in your kitchen. Sometimes the pros just see things we're blind to after years of doing it wrong. Guess the real pro tip is to hang out at more demo booths.

My grandpa taught me to find the seam in a chicken thigh before you even pick up the knife. Just press with your thumb along the back and it pops right open. It's all connective tissue, not muscle.
