Just got a 900lb beef delivery that was supposed to be primals, but the processor sent it all in quarters

Had to break down four whole hindquarters by myself in a 12-hour shift because the order was messed up. My band saw was smoking by 3pm. Anyone else ever get a massive mis-cut order that threw your whole week into chaos? How'd you handle it?

Man that "band saw was smoking by 3pm" line hit me. I used to think getting bigger cuts was always easier, just less handling. Then we got a pallet of bone-in loins instead of strips one time. Spent two full days just re-breaking and trimming, lost all our prep time for specials. It totally changed how I check incoming orders now, I open a box from every pallet first thing.

My buddy's shop got whole lambs instead of legs, @lewis.drew. Total nightmare.

Pallet of lamb legs would've been bad enough, whole lambs is just cruel.
