I used to think a 6-inch boning knife was all you needed, but switching to a 4-inch Victorinox for breaking down hogs last year gave me way more control.

Has anyone else found a shorter blade works better for certain animals?

Yeah, it's all about the right tool for the job, right? A big blade feels clumsy when you're working around a hip socket or separating ribs. That extra control from a shorter knife lets you feel what you're cutting instead of just forcing it. Who cares what the blade length says on the package if it doesn't work in your hand?

Smaller knives are safer for tight spaces.
