Been tracking my numbers just for myself since I took over the meat counter at the shop in Portland. This month I passed 1,000 lamb chops broken down from whole racks and loins, which is wild because I started here not even a year ago. It hit me that all those little tricks, like feeling for the exact rib gap and keeping the bone scraper at the right angle, just became muscle memory. The first week I botched 3 out of 10 racks, now it's maybe 1 in 20, and that steady progress feels better than any compliment. Did anyone else hit a random count that made them realize how far they'd come? What number was it for you?
Wait, 1,000 lamb chops from whole racks and loins, that's like 83 racks a month if you're getting 12 chops per rack, which is a solid number but I gotta ask, are you counting the loin chops separately from the rib chops? I only bring it up cause I've seen guys hit big round numbers by lumping both together, and it kinda messes with the tracking.
