Happy I tossed $150 on a good boning knife instead of the cheap set

Bought a single Victorinox boning knife last month after snapping three cheap ones in six months and it's already paid for itself in how much less waste I've had on trimming jobs, anyone else notice a big difference from just one quality piece?

My first good boning knife was a Wusthof and it lasted me over a dozen years before I finally replaced it last spring. The difference in control and precision makes trimming fat and silver skin almost effortless compared to a cheap blade. Once you feel how cleanly it moves through meat, you really understand why pro cooks swear by just one solid knife instead of a whole cheap block set.

Yeah, same here - one good knife beats a whole cheap set every time.
