Oh man, I used to think losing product like that was just part of the job and no big deal. But seeing it written out like this honestly changed my mind, that's a rough way to lose a whole lamb shoulder.

My buddy Dave worked at a spot downtown and had a similar thing happen with a whole brisket. He put it in the cooler after the Friday rush, but someone knocked the temp probe loose. Saturday morning he came in to find it sitting at 80 degrees for 8 hours. Owner made him toss it right in the trash. $120 brisket gone because of one loose wire. @the_jana you're right, it hits different when you see the actual dollar amount.
