Had a Tuesday where I broke down 14 hogs before noon and everything just clicked
Two Tuesdays back my usual guy called in sick so I ran the whole kill floor solo at our place outside Waco and somehow broke down 14 hogs before lunch with clean cuts on every primal. Normally I am lucky to get through 9 or 10 before my forearms start yelling at me, so I have been trying to figure out what was different, and the only thing I changed was sharpening my boning knife twice that morning instead of once. Does anyone else find that a fresh edge is worth more than an extra pair of hands, or am I just fooling myself?
