Had a customer ask for a full breakdown of a wild boar last week

I got a call from a hunter who brought in a 180 pound boar he got up near Redding, and he wanted every single primal separated and the offal saved. It took me and my apprentice the better part of a morning to get through it all, working around the shot damage. How do you guys usually price out a full custom job on game like that, by the hour or by the final weight?
