Finally switched to a victorinox breaking knife after years of using a cheap one

I always figured a knife is a knife, but after my third cheap blade chipped on a beef quarter last month I borrowed a coworker's victorinox. The difference in how clean it went through the connective tissue made me toss my old one that same day. Has anyone else noticed how much less fatigue you get with a lighter boning knife?

My first week with a Victorinox, my wrist stopped aching halfway through a 200lb case of pork shoulders, and I didn't even realize I'd been gripping my old knife like a vise. The lighter handle lets your fingers relax between cuts instead of clamping down to keep control, which adds up fast over a full shift. Makes you wonder why anyone bothers fighting with a heavy blade for hours when the light one does the same job without punishing your joints.
