Why does nobody talk about dried herbs for budget cooking?

I've been cooking on a tight budget for years, and in my experience, dried herbs are way better than fresh for cutting costs. Most folks swear by fresh basil or cilantro, but let's be real, they wilt fast and cost a lot compared to the dried stuff. I used to buy fresh parsley every week for my soups, and half of it would end up in the trash. Now, I keep a rack of basic dried herbs like oregano, thyme, and rosemary. They last for months, and I can make a big pot of chili or spaghetti sauce that tastes great without rushing to use up fresh herbs. Sure, for a fancy salad, fresh might be nice, but for your everyday budget meals, dried does the job just fine. Your mileage may vary, but this switch has helped my grocery bill a lot, and I don't feel like I'm missing out on flavor.

What's your method for storing dried herbs to keep them potent for so long? My cupboard ones seem to lose their punch after a couple months, even in those little jars. Do you keep them somewhere dark or transfer them to a different container?

Totally agree with you on this, dried herbs are a lifesaver when you're watching your spending. Add them early when you're cooking, like oregano in your tomato sauce at the start, so they have time to wake up and spread their flavor. I've made so many cheap pots of beans or rice just by tossing in some dried thyme and bay leaves, it's crazy how much of a difference it makes. Honestly, the only fresh herb I even bother with now is maybe some green onion because it's cheap and lasts.

Feel your pain on the cupboard herb situation! I started keeping mine in a drawer away from the stove and light, and it made a huge difference. Those little jars just don't cut it for long term storage. I also try to buy smaller amounts more often, even if it costs a bit more per ounce, because using up a tiny bag in a few months beats having a big jar of dust.
