Warning: My garlic powder overload smoked out the whole apartment

Remember when cheap cooking meant just tossing the cheapest stuff together? (Simpler days, for sure.) I tried to make a big batch of pasta sauce for a friend's potluck, using extra garlic powder to make it go further. Well, when I heated it up, it started smoking like crazy, setting off the smoke alarm. Everyone had to stand outside in the cold for ten minutes while it aired out. Back in my first apartment, we would have just waved it away and kept eating, but now everyone gets all worried about safety and smells. It's a reminder that being thrifty with food can still lead to some pretty funny moments (if you can laugh about it later). I'll stick to fresh garlic from now on, even if it costs a bit more.

Heard somewhere that powder burns way faster than fresh.

That 'powder burns faster' idea doesn't hold up for me. You just have to watch the heat more closely.

My grandma always kept her flour in the freezer. Said it stopped the fats from going off and kept it from burning as easy. Might be more about how you store it than the form.
