Update: My neighbor gave me a bag of potatoes and it changed my whole week

I was just getting home from work on Tuesday when my neighbor, Frank, stopped me. He held out a big paper grocery bag and said, 'My garden went nuts, take these.' It was full of russet potatoes, maybe 10 pounds worth. I made a huge pot of potato soup that night with some onions and broth I already had. It fed me for four days straight for basically no extra cost. What's your favorite way to use up a big batch of one cheap veggie?

Remember when my buddy got a giant box of zucchini? He ended up shredding and freezing it in bags, which was a total game changer for quick breads and pasta sauces all winter. It really showed how a little prep can stretch a windfall for months.
