TIL I can make a whole pot of bean soup for about $2.40 if I skip the canned stuff
I did the math on my grocery run from last Tuesday and realized I was paying $1.29 a can for beans when a one pound bag of dried pinto beans at the store on 5th Street costs $1.49 and makes about 6 cups cooked. So I soaked a bag overnight, tossed in an onion, some garlic, and the ham hock I got marked down to 99 cents, and it fed me lunch for four days. The old me would grab three cans, a carton of broth, and call it done, which came out to almost $8 and tasted flat. The new way takes longer on the stove but I just let it simmer while I do laundry. I also stopped dumping the soaking water because a coworker in Austin said the flavor lives in there. Anyone got a trick for making the beans cook faster without a pressure cooker?
