Stumbled on a budget meal using leftover rice
I used to waste extra rice. Now I combine it with any veggies I have and a scrambled egg for fried rice. It's a cheap way to make lunch.

Disagree on the fried rice method... it usually needs soy sauce and oil I don't always have. Mixing rice with canned beans is cheaper and easier.

Hey @michael_mason, you're right about not always having soy sauce and oil! But fried rice can work with what you already have. I use a spoonful of butter or mayo from the fridge instead of oil. A dash of hot sauce or a ramen flavor packet adds plenty of taste. Your bean idea is solid, but rice is a blank canvas for pantry scraps like old spices or salsa. Getting creative can make cheap meals way more exciting!
