I get that texture is important, but it can work if you use the right amount. You just have to treat it like a binder, not a main ingredient.

But what if it ruins the whole dish? Look @the_richard, calling it just a binder doesn't help. The line is so thin between enough and too much. One extra pinch and the whole thing turns into a gluey mess. Texture should come from the real ingredients, not some add-in. It's a band-aid fix for a problem that doesn't need to exist.

Yeah exactly. I tried the oatmeal trick with meatballs once and it was like eating wet sawdust. You're right about that line being way too thin. It sucks all the moisture out and just leaves this weird paste feeling in your mouth. Burgers should be juicy, not glued together with pantry leftovers. My guess is people see it online and don't realize how little you actually need. Never doing that again.
