Tried a snake method with cherry wood on a pork shoulder last Sunday

The bark came out way darker than I expected, almost black, and the smoke flavor was way too heavy. Did I mess up by using too much wood or is that just how cherry burns?

Cherry shouldn't turn anything black. Something else is wrong there.

My old cherry tree had the same problem until I got a soil test done. Turned out the roots were rotting from too much water and not enough drainage. Fixed the watering schedule and it bounced back the next season.
