Swapped my stick burner for a pellet grill, here's what got me
For 7 years in Austin I swore by my offset stick burner, feeding it post oak every 2 hours like clockwork. Then my neighbor let me run his pellet smoker for a brisket cook while mine was down for repairs. I figured the flavor would be flat, but that cook held 225 degrees for 9 hours straight with zero babysitting, and the bark came out better than half my offset batches. So I picked up a used Camp Chef for $350 last month for weeknight ribs, and now I only break out the offset for big weekend cooks. Never thought I'd say that, but the convenience wins for a working dad, has anyone else made that switch and stuck with it?
Ditching my stick burner for good was the move I never expected to make. I kept my old offset for the big holiday cooks, but honestly, the pellet grill has taken over 90 percent of my smoking. The set it and forget it thing is REAL, especially when I can throw on some pork shoulder at 10pm and wake up to perfect meat instead of babysitting a fire all night. The bark on my last brisket was so good my brother asked if I'd secretly gone back to the offset. I think people are finally realizing it's not a cop out, it's just smarter for how we actually live.
