Shoutout to the pitmaster at the Memphis comp who let me watch his fire all night
Three years ago at a contest in Memphis I got stuck next to a guy running a 20 year old offset who never once looked at a thermometer the whole night, just kept his hand over the stack. He let me sit with him til 4am and told me "the fire talks, you just gotta listen." Now I catch myself doing the hand test before I ever trust a probe, has anyone else picked up habits like that from watching an old timer work?
