Saw a buddy's offset smoker go from rookie to pro in just 6 months
My neighbor Mike got a cheap Oklahoma Joe offset last winter and his first few cooks were rough, like raw chicken and bitter bark tough. Fast forward to last weekend and he put out a brisket with a perfect smoke ring and a clean burn on the firebox. He said the big change came from learning to control his airflow with the chimney damper instead of just adding more wood. What's the one thing you wish someone told you when you first started on an offset?

Learning to manage the firebox vents changed everything for me too.

Ngl I was skeptical at first, thought fiddling with vents was just extra work. But once I got the hang of it, the difference was night and day.
