Rant: my uncle told me to wrap my pork butt in foil at 160, and I fought him on it for 2 summers
Finally tried his way on a 9 lb butt in Amarillo last month and it blew past the stall like nothing. Now I'm wondering what other dumb things I've been stubborn about, what's the one piece of pit advice you ignored way too long?
That 160 temp is a good starting point but the real trick is the wrap itself, not just the number. Foil traps steam and pushes it right through the stall, but you lose some bark crispness so I crack the foil open the last 30 min. Took me way too long to stop fighting that too, so you're not the only stubborn one.
