How did the bark turn out with the extra moisture?

Honestly it's just chocolate bark, not a science project. A little extra moisture never ruined dessert. People get so stressed about perfect results but it all tastes the same. Doubt anyone even noticed a difference.

My pork shoulder last month had a water pan and the bark was still plenty crispy. The whole moisture debate feels like people overcomplicating a pretty forgiving cut of meat. We're not doing competition barbecue here, it's just dinner in the backyard. If the meat is tender and tastes good, that's the whole point.
