My uncle told me to wrap my brisket in a beach towel for the rest and I thought he was nuts

Sounds like a recipe for sandy brisket.

My uncle's BBQ joint in Austin uses a commercial grade rub with a little sanding sugar for bark. It's not about being cheap, it's about getting that perfect crust without burning. His brisket sells out by 2pm every day.

Exactly, @morgan_thomas. It's that kind of corner-cutting that shows up everywhere now. You see it in cheap products that break fast. Just feels like a wider trend of skipping the important steps.
