My neighbor told me to wrap my brisket in foil after 4 hours and I'm glad I listened

He's been smoking meat in Kansas City for 30 years and said the foil would keep it from drying out during the long stall. I tried it last weekend and the brisket came out way more tender than my usual method. What's the best piece of advice you've gotten from an old timer?

Wait, you used to not wrap it at all? I was the same way, thought the bark would get ruined. My uncle finally convinced me to try the foil boat method, not even full wrap. Total game changer, still get good bark but it stays so juicy. I fought that advice for years thinking it was a cheat. Now I tell everyone to listen to the old guys, they've messed up enough briskets to know what works.
