My brisket flat kept drying out no matter what I did

It took me almost a year and a dozen attempts to figure out my smoker was running way hotter than the gauge said. I finally used a separate probe at grate level and saw a 50 degree difference. Has anyone else had a smoker that lied to them?

My buddy swore by his instant read for years until his probe broke mid-cook, ruined a whole packer brisket, and he finally got a good separate one?
