I was wrong about wrapping my pork butt in foil for the whole cook

My buddy in Kansas City convinced me to try the foil boat method after the stall, and the bark was way better (and the meat still tender). Anyone else have a wrap method they swore by and then switched?

Man, that foil boat method woke me up too. Used to wrap tight in foil and thought I had it figured out, but the bark was always soft like wet cardboard. Tried no wrap once and ended up with a pork butt that looked great but felt like jerky on the outside - my dog loved it though. Now I hit it with the boat at the stall and actually get a good crust that stays crispy while the inside still shreds. Better late than never, right?
