I thought wrapping brisket was just for show until I tried it myself

For years I skipped the Texas crutch because it felt like cheating, like you were hiding bad bark or something. Then last fall I did a side by side test with two identical 14 pound briskets on my offset. One I left naked the whole time, the other I wrapped in butcher paper when it hit 165 internal. The wrapped one finished in 10 hours flat, while the naked one took almost 14 and the flat was a bit dry. The wrapped brisket was way more juicy and still had great bark, just not as crunchy. I mean, it totally changed my mind. Now I wrap every time after the stall. Anyone else do a test like that and get surprised by the results?

Honestly same thing happened to me. Tbh I was shocked how much better it turned out.

Yeah @james92, that feeling when it actually works out is wild. What was the biggest change for you? Like, were you expecting a small fix and got a whole new setup, or was it more about the quality being way higher than you thought? I had a similar thing with a car repair last year. Thought it would just be a patch job, but the mechanic found a better part that made it run smoother than before I even had the problem.

My neighbor had the same thing with his lawn tractor last summer, thought he was just getting a belt replaced and ended up with a whole transmission rebuild that made it run like new. Its funny how often that happens with things we write off as lost causes, whether its a machine or a project around the house. I think its because we get so used to things being a little broken that we forget what good actually feels like until someone shows us.
