Finally got my bark to come out crisp every time
I used to have issues with my BBQ bark being too soft. After chatting with a pitmaster at a local event, he suggested spritzing with apple juice less often. I gave it a shot on my last brisket, and the bark was fantastic. It held up well and had great flavor. I'm so pumped to try this on other cuts lol.

My neighbor Frank tried a brisket last summer where he only spritzed twice the whole cook. He used to soak it every hour like many folks do, but the bark would never set right. After he followed the less is more advice, the bark turned out dark and crunchy. He told me the meat was still juicy inside, which was his big worry. It changed his whole approach to smoking now.

Wait, you mean spritzing less actually works? I used to be all about hitting my meat every 30 minutes thinking it kept things moist. Totally bought into that. After my last pork shoulder turned out with a rubbery skin, I tried leaving it alone way longer. The bark set up so much better, way more crunch. I'm a believer now.

My last brisket I only spritzed once after the first 4 hours. Let that bark really build up without messing with it. The outside got that perfect dark crust and the inside stayed super moist. Total game changer for my smokes.
