Dropped $120 on a Fireboard 2 and it saved my brisket last Saturday
I was running my offset and the temperature kept dipping on me. I had this old probe thermometer that was giving me weird readings so I grabbed the Fireboard 2 at the last minute. It tracked my pit temp and meat temp through the whole 14 hour cook and showed me exactly when my fire needed fuel. Has anyone else had those cheap thermometers mess up a long cook on them?

Funny enough, the cheap thermometers aren't always the main problem - it's the placement that screws people up more. Most folks just clip them to the grate and call it good, but that gives you a reading that's way off from what's actually happening inside the meat. The Fireboard's real value is having multiple probes to map out hot and cold spots. I've seen guys with $400 setups still mess up brisket because they trust one probe sitting right next to a firebox wall. That old thermometer might have been fine if you stuck it in the thickest part of the flat instead of the point. The Fireboard just makes you pay attention to the right details instead of guessing.
