3 years ago I switched to a stick burner, now I'm having second thoughts on gas assist
I've been running an offset stick burner out in Kansas City since fall of 2021, feeding it splits every hour on long cooks. Last weekend I helped a buddy who runs a propane-assisted unit at a comp, and honestly the overnight stability was something else, zero babysitting. But when I tasted the bark and smoke ring side by side, mine had way more depth, his was clean and even but almost too neat. I'm torn because I love the ritual of tending the fire, but my back and sleep schedule are begging for a break. Last month I missed a whole brisket window because I dozed off for 45 minutes, cost me about $80 in meat. Has anyone else run both styles and stuck with one, or do you switch based on the cook and just accept the tradeoffs? What tips the scale for you, flavor or convenience?
