Vent: Customer told me my sourdough crust was 'too loud'
Some lady in Columbus picks up her loaf and holds it to her ear. She squeezes it and goes 'this is way too crunchy, I can hear it from across the room'. I've been baking this same recipe for 4 years, get nothing but compliments. But now I can't stop thinking about it. I dropped my bake temp by 15 degrees and pulled the loaves out 10 minutes earlier. The crust is softer now, but honestly it feels wrong. Like I'm betraying everything I know about bread. Has anyone ever changed their whole process over one weird comment and regretted it?
Sounds like one person with a weird complaint got in your head. Crusty bread is supposed to crackle, that's the whole point, so why mess with something that's worked for 4 years?
