Tried proofing my yeast with honey instead of sugar and it worked better.

The yeast seemed more active and the bread rose faster.

Local wildflower honey made my whole-wheat loaf rise like crazy too.

That wildflower honey from the county fair last year boosted my sourdough rise by half. It must be the natural sugars working with the yeast better than plain sugar. Glad to hear it's not just me, @olivia_owens.

Does using raw honey instead of processed make a difference in proofing? I've used honey for years and my yeast always gets bubbly fast. That matches what @michael_mason said about wildflower honey boosting rise. Raw honey has natural sugars and enzymes that yeast love. Just make sure your liquid isn't too hot or it can hurt the yeast. I warm the honey a bit so it blends smoothly into the water. This little switch really does give you a stronger, quicker rise.
