Showerthought: my scale was lying to me for 7 months and my sourdough paid for it
I always trusted my old digital scale because it looked fancy and beeped nicely. Then a baker friend from Cleveland visited and dropped a 500 gram test weight on it and it read 487. That is only a 2.6% error but in a 70% hydration dough it threw off my flour and water ratio just enough that my crumb was gummy for months. I kept blaming my starter, my oven, even my tap water, and I was buying fancy flour at $9 a bag trying to fix nothing. Bought a $22 scale that reads to 0.1 grams and the first loaf out of the oven had an open crumb like I had never pulled off at home. Now I check it with a nickel (5 grams) every couple weeks and it holds steady. If your bread keeps coming out dense no matter what you try, test the scale first, it took me way too long to figure that out. Has anyone else had a tool lie to them like that?
