Showerthought: I saw a line around the block for a new sourdough place

Last week, a new bakery opened on Maple Street and the line was down the sidewalk. Three years ago, that spot was a coffee shop that sold pre-made muffins. It made me think about how the whole 'artisan' thing has gone from a few shops to being the main thing people want. Has anyone else seen their local scene shift like that?

Watched the same thing happen with craft beer here.

Oh man, I totally get that. I used to think all the new craft beer spots were a good thing, like more choice is always better. But then you see your favorite small brewery close because they can't compete with the big guys buying up all the shelf space. It just feels like the same cycle over again, just with a different label.
