Pro tip: Salt your butter for better crust, trust me on this

I had a chat with this older baker named Carol at the farmer's market in Portland last Saturday. She said she always adds a pinch of sea salt to her butter before creaming it with sugar for cookies, and I thought she was crazy. Tried it on my last batch of chocolate chip cookies and the flavor depth was insane, way better than just salted butter alone. Anyone else ever try something weird like this that actually worked?

Wait I actually read about this in a food science newsletter last week! The whole thing with blooming salt in butter is that it helps release the fat soluble flavor compounds better than just sprinkling it on top.
