Pro tip: Salt your butter for better crust, trust me on this
I had a chat with this older baker named Carol at the farmer's market in Portland last Saturday. She said she always adds a pinch of sea salt to her butter before creaming it with sugar for cookies, and I thought she was crazy. Wait I actually read about this in a food science newsletter last week! The whole thing with blooming salt in butter is that it helps release the fat soluble flavor compounds better than just sprinkling it on top.
