Noticed a lot of new bakers skipping the autolyse step to save time
I started doing it 6 months ago and my bread structure got way better. Has anyone else found that skipping it messes up the crumb?

Honestly autolyse is just an extra step that doesn't do much for me.

Doesn't that kinda apply to most things we overcomplicate in the kitchen?
