My old boss said to always bake cheesecake in a water bath, and I argued with him for 20 minutes
Tried it his way on a whim at 11pm for a coworker's going away party and the top came out flawless, so now I'm wondering if the foil-wrap crowd or the no-bath crowd has the real answer here.
