I thought sourdough starters were just a trendy fad until my neighbor in Boise gave me a 5-year-old one that made my sandwich loaves taste like they came from a real bakery.

After feeding it for a month and baking a dozen loaves, I finally got the open crumb and tang I'd been chasing with commercial yeast for years, so has anyone else had a starter completely change their basic bread game?

Yeah my buddy had the same thing happen. He got a starter from his aunt in Vermont, it was like 10 years old or something. He used to make these dense, sad bricks with store yeast. After two months with that starter, he brought a loaf over and I swear it was the best bread I ever had. The crust was insane and the inside was all full of holes. He said it just works different, like the wild yeast is way more alive. Totally changed how he bakes now.

Honestly @dylanbarnes, did he say if the starter smells different too?

Read that older starters have a more stable mix of yeast and bacteria. Makes sense why they give better flavor and rise than a brand new one. Guess it's not just hype after all.
