A judge at the county fair told me my sourdough was underproofed and I almost quit right there
I entered my first sourdough loaf at the Sedgwick County Fair back in August and the judge wrote one word on my score sheet: underproofed. I was so mad I almost tossed the whole starter in the trash. But I sat down with her for ten minutes after the judging and she poked the dough and showed me how it should spring back halfway, not all the way. Now I proof by feel instead of the clock and my loaves finally get that open crumb. Has anyone else gotten feedback at a show that stung but ended up helping?
Getting one word on a score sheet at a county fair isnt exactly a life ruiner lol. Sounds like it actually worked out since you learned to proof by feel.
