Appreciation post: pancakes for dinner and it was honestly great

Last night I had a choice between a leftover chicken stir fry or making a fresh batch of pancakes. I picked pancakes at 7pm, loaded them with blueberries and a stupid amount of syrup, and ate them like a happy 6 year old. Zero regrets, plus I had one for breakfast this morning cold and that worked too. Anyone else find dinner pancakes hit different than morning ones?

Grabbing that energy and running with it. Dinner pancakes just hit different because there's no pressure. Morning pancakes feel like they have to fuel your whole day, but night ones are pure play. I've even gone savory with them before, like cheddar and green onion in the batter, and that was a game changer for late night cravings. Cold leftover pancakes the next morning are basically a breakfast cookie, so you're winning twice.
