Tried baking soda vs. baking powder in pancakes and wow what a difference

Honestly, I've been making pancakes for years and they always came out flat and sad. Last weekend I accidentally used baking powder instead of baking soda in my batch and the pancakes actually puffed up. I thought they were the same thing but nope, baking powder has acid in it already. Has anyone else mixed them up and had a total fail?

Wait, you really thought they were the same thing? That's a pretty basic kitchen mix up that most people figure out after one bad batch of cookies. Baking soda needs something acidic like buttermilk to work, but baking powder has that built in so it's way more forgiving for pancakes. I've definitely done the opposite and used baking soda when I should have used powder and ended up with pancakes that tasted like a chemistry experiment. Honestly just keep both around and read the recipe twice before dumping stuff in.

Did you toss that batch or force yourself to eat it? I've definitely been there too buddy!
