I spent 9 months hating the old mason jars, then I found the wax ring

Honestly, I used to curse every time I cracked open a dusty jar from the basement shelf. The rusted lids, the weird smell, the constant fear of botulism, I was ready to toss the whole lot. Then last month I pulled down a jar that had this thick, brittle layer of wax on top, and I thought it was some kind of mold disaster. My neighbor, who's 74 and canned stuff her whole life, saw me about to bin it and stopped me. She showed me how that wax ring was a seal, not a flaw, and that the peaches inside were still perfect after 12 years. Now I get why people fight over grandma's canning stash, it's not just nostalgia, it's actual food that beats anything from the store. Am I wrong for still being sketched out by the ones with paper labels peeling off, or is that a real red flag too?

I was exactly the same way, seriously. Every jar with any kind of weird coating I'd just toss it, figured it was years of bacteria or something. But then my aunt showed me her honey stash with that same wax cap and explained how it keeps air out completely, and I felt dumb for all the good stuff I probably threw away. The peeling paper labels though, that's a different story, I'd still give those a suspicious sniff before trusting them.
