Just realized pre-shredded cheese has sawdust coating it

Bought a block of whole milk mozzarella on a whim last month from Trader Joe's and shredded it myself. The melt was totally different, no greasy separation or that weird powdery taste. Has anyone else switched to block cheese and noticed a real difference on their pizzas?

Honestly the difference is night and day. Pre-shredded stuff is coated in potato starch or cellulose to stop clumping, which messes with the melt. I switched to shredding my own blocks a few years back and never looked back - the texture on pizza is way stretchier and doesn't get that weird greasy pool. Just keep the block in the fridge and shred it right before you cook, takes maybe 30 seconds extra.

Yeah I was totally in that camp for years thinking it didn't matter... but you're right @gibson.oliver, I tried shredding my own last week and it really is way better. Never going back now.
