Changed my tune on the new taco truck after seeing their setup evolve

I was dead set against La Taqueria Mobile when they first parked on Elm Street back in March, their old cart was a mess and the salsa tasted like watery ketchup. But last week they showed up with a proper trailer, shiny griddles, and a handwritten menu board, the al pastor had actual pineapple and char marks that made me stop mid-bite. Anyone else had a local business flip your opinion after they actually listened to feedback?

That truck flipping the script on their whole setup makes me wonder if they saw how the older food cart crowd started avoiding them and actually did something about it. Rare to see a business adjust that fast instead of just digging in.
